To give authenticity they should be the Gladius, or Roman short sword, and a Scutum, or small round shield.

The costume can be made special with further refinements like a cape, more weapons, greaves to protect the shins, and bracelets. A javelin could also be carried around, but that would probably be unwieldy.

This makes a wonderful choice as half of a couple’s costume also. With the man dressing as the Centurion, the lady has a choice of dressing up as one of the fashionable Roman ladies or as one of the wildly individual barbarians fighting the Romans.
